Step 1:

Pour-Over

  • As hot water is poured over the grounds, the coffee is wetted and aerated.
  • This aeration (further accelerated by stirring) speeds up the process of extraction and helps to remove sour carbon dioxide from the brew.

Step 2:

Fast Immersion

  • The coffee is allowed to steep, and most of the extraction takes place.
  • Depending on the grind size and time that the coffee is allowed to steep different flavor notes can be extracted.

Step 3:

Air Pressure & Micro-Filtration
